Coriander Coconut Milk Rice/Coriander Pulao

Coriander coconut milk rice/Coriander Pulao is made of basmati rice, coriander paste enriched with coconut milk and very less spices.This is a very good dish for lunch box or sometimes can be planned for dinner.Coconut milk has amazing benefits like it controls blood pressure and cholesterol,builds muscle,improves digestion.It is also good for hair, slows down hair loss, restores dry hair and scalp.Coriander leaves are rich in Vitamin C,Vitamin K and protein.They also contain small amount of protein,calcium.Coriander water helps in eliminating all excess toxins from the body and make you feel light and contribute to weight loss.So once in a week, we can make this pulao as it has many benefits.Here is the recipe of Coriander Pulao.

Ingredients :
Basmati rice-2 cup( 1 cup=200 gms)
Coriander Leaves-1/2 bunch
Green chilli-6 
Ginger-2 inch
Garlic pods-4 nos
Coconut milk-1 cup 
Thin sliced Onion-1 medium size
Turmeric powder-1/2 tsp
Bay Leaf-2
Cloves-3 nos
Cinnamon sticks-2 inch
Cardamom-3 nos
Shahi jeera-1/2 tsp
Cooking oil-3 spoons
Salt- to taste

Procedure:
1.Soak Basmati rice in water for 20-30 mins.
Make a paste of 1/2 bunch coriander leaves,6 green chillies,2 inch ginger,4 garlic pods.Use minimal water while grinding.( Green chillies can be increased as per your spicy level)
2.Take a cooker.Heat it with 3 spoons of oil,add 1/2 tsp shahi jeera,2 Bay leaf,3 cloves,2 inch cinnamon sticks,3 cardamom.Saute it for a minute.
3.Add 1 medium thinly sliced onions.Fry, till it becomes transparent and changes to light red.
4.Now add the paste and cook it till it changes its colour to dark green.
6.Once it changes its colour and starts oozing out oil add 1/2 tsp turmeric powder.
7.Add 1 cup thick coconut milk and 3 cups of water and required amount of salt for the Pulao.(Usually for 1 cup of rice we add 2 cups of water,as already 1 cup coconut milk is added so now 3 cups of water is added to it.)
Once it is boiled add the soaked rice and let it boil.
8.Close the lid when everything starts boiling and turn the flame to low for 10 mins.After 10 mins switch off the flame and wait till the pressure goes down.
9.Serve hot with Paneer gravy or other gravies!!!
