Who doesn't loves sweet. One such sweet is Pineapple Kesari. Kesari/ Sheera / Kesari Bath are the different names for Kesari. Kesari is made of rava /semolina which is roasted and boiled for 2 mins, sugar is added to make it sweet. For Pineapple Kesari, Pineapple is fried and added to kesari. For good results add a ripen Pineapple to Kesari which adds more taste to kesari. Once you eat this kesari you will get addicted eating this kesari.

Ingredients : 
Rava/Semolina/Sooji-1 cup (200gms)
Pineapple pieces-1 cup
Sugar-1 cup or 1 1/4th cup
Water-2 cups
Cashewnut- 6-7 chopped
Raisins- 6-7
Almonds-4 chopped
Ghee-3 tsp

Procedure :
1.Now take a pan,add 1 cup rava and roast the rava in a very low flame until it changes its colour to light red.Keep stirring else the rava will get burnt.Also u can add 1-2tsp ghee and roast the rava.I roasted rava without ghee.
2.Take Pineapple and chop into pieces. Add 1 cup of chopped pineapple in a pan and saute for 3 mins. Add 1/4th cup of sugar to the pan and saute again. The pineapple will turn little brown. They will be very sweet to taste which increases the flavour in rava kesari.
 
3.Now take a pan and add 2 cups of water for 1 cup of rava,Boil it.Once boiled turn the flame to low and add saute pineapple pieces to it. After it boils slowly add rava (rava should be cooled after saute) and keep stirring. Break all the lumps if formed.

5.Lets add 1 1/2 cup sugar.It can be adjusted as per the requirement.(1 1/4th cup to 1 1/2 cup).Stir it nicely.As soon as you add sugar it will start melting and the consistency will be like this.


6.In between add 2 tsp ghee so the Kesari won't dry off.Keep stirring for 7-8 mins and then switch off the flame. Let the Kesari be in the pan for 5 mins closed with the lid. While serving after 5 mins will give you a very good aroma.

7.Garnish with chopped cashew nuts and raisins fried in ghee. You can also add almonds. For garnishing, take a small pan, heat it with 1 tsp of ghee, add raisins the raisins will become large and you can pour in the pineapple kesari. Again add 1 tsp ghee fry the cashew nuts in a medium flame till it becomes light red. Pour this to the Pineapple Kesari. Give a good mix Pineapple Kesari is ready. Serve hot in a tasting bowl!!
