There are various ways to prepare garlic chutney, and one method involves roasting garlic, red chilies, and tomatoes. Afterward, grind the ingredients and boil until the oil separates. This recipe holds special significance as it's my mother-in-law's signature dish, and it's one of the most delicious chutneys I've had since getting married. Here's the complete recipe

Ingredients :
Garlic-12-14 nos
Tomatoes-5 nos
Red chillies-10-12 nos
Instructions :
1.For garlic chutney,Take 12-14 garlic.Peel the skin and chop roughly.
2.Take 10-12 red chilli.For 1 tomato I have taken 2 red chillies.Add more chillies to increase the spice level.
3.Take 5 medium size tomatoes and chop to pieces.
4.Take a pan.Heat with 2 table spoon oil.Add chopped garlic.Saute till it changes its colour to golden red.
5.Add red chillies and saute for a minute.
6.Add chopped tomatoes and cook till it becomes soft.Add 1 tsp salt and pinch of asafoetida.Cool down the mixture completely.
7.Transfer the ingredients to mixie jar and grind to fine paste.
8.Take the pan.Heat with 4-5 table spoon oil.Add the mixture and stir it.When it starts boiling, cover it with lid,turn the flame to low.Cook till the oil separates out.In between open the lid and stir it.Once cooked transfer to bowl and serve with paratha,Idli,Dosa and Appam.
