Unniyappam is a popular dish from Kerala.It is a small round snack made from rice,jaggery,roasted coconut and banana.This snack is usually prepared on the eve of Vishu(New Year festival). In Malayalam "Unni" means small and "Appam" means rice cake.This Appam is so delicious that if we eat one we feel like eating more.Here is the full recipe of Unniyappam.

Ingredients:
Raw rice-1 cup (200 gms)
Jaggery -1/2 cup (100 gms)
Banana-2 medium size
Cardamom-4 nos
Sukku powder-1/2 tsp
Thinly sliced coconut-3 tsp
Black sesame seeds-1 tsp
Salt-a pinch
Baking soda- large pinch
Instructions-
1.Take a bowl.Add 1 cup of raw rice (200 gms).
2.Rinse rice with water for twice.Then soak the rice in water for 2-4 hrs.
3.Before grinding rice,take a pot or pan.Add 1/2 cup of jaggery and 1/4 cup of water or add the water till all the jaggery immerse in water.Boil the jaggery till it melts.
4.Once jaggery melts filter the syrup to remove any dirt particles.Lets cool the syrup and keep aside.
5.Take 2 medium size bananas and cut into pieces.
6.After soaked for 4 hrs,drain the water from rice and add to mixie jar.
7.Add the bananas ,jaggery syrup,1/2 tsp sukku powder and 4 cardamom.Grind together and form a batter and transfer the batter to bowl.
8.Take a pan.Heat with 1 tsp oil.Add 3 tsp thinly sliced coconut.Saute till it changes its colour to brown.
9.Along with coconut add 1 tsp black sesame seeds and saute for a minute and switch off the flame.
10.Add the saute coconut to the batter once it is cooled.Add a pinch of salt and mix it.Rest this batter for 8 hrs and let it get fermented.Once the batter is fermented it is ready to make appams
Or Add a big pinch of Baking soda to make it instantly and to make the appams soft.
11.Take Paniyaram pan/ appe pan.Heat the pan with 1/4 tsp of oil to each mould.Once the oil is hot add the batter to 3/4th of mould as the batter will risen up.Cook in medium flame so the Paniyaram won't get burned.
12.Once the sides of Paniyaram starts looking red and the upper part of batter gets solidified flip the Paniyaram to other side with the help of spoon.
13.Once both sides gets cooked transfer to plate and serve hot.
