Punugulu is a popular snack hailing from Andhra Pradesh.This is a bite size snack quickly made from Idli batter at tea time.Punugulu is soft from inside and crisp from outer just like pakodas.It serves the dual purpose of not wasting the left over and enjoying the hot crispy punugulu during tea time.It can also be made of tiny shape without adding onions.Punugulu goes well with peanut chutney.Click here for peanut chutney recipe.Here is the recipe of Punugulu.

Ingredients :
Urad dal-1 cup (100 gms)
Idli rice-3 cups (300 gms)
Raw rice-1/2 cup (50 gms)
Fenugreek seeds-1/2 tsp
Or Idli batter-1 bowl
Onion-1 medium size (chopped)
Curry leaves-Handfull
Coriander leaves-Handfull
Chilli powder-1/2 tsp
Rice flour-1/4 cup
Instructions :
1.Take a bowl.Add 1 cup of urad dal (100 gms).Wash and rinse urad dal 2 to 3 times.Add enough water to soak them as it expands.Soak urad dal for 2 hrs.Then grind urad dal after 2 hrs.The Paste will be thick,dense.
2.Take another bowl.Add 3 cups (300 gms) of Idli rice, 1/2 cup (50 gms) of raw rice and 1/2 tsp fenugreek seeds.Wash and rinse for 2 to 3 times.Soak them for 4 hrs then grind into batter with 1 tsp of salt.
3.Mix urad dal and rice batter together.Let it rest for 8-10 hrs.After 10 hrs, it will get fermented and it is ready to use.
4.For pungulu,take some batter and rest can be used for making Dosa or Idli.If you already have Idli batter then skip the above 3 points.For pungulu batter keep ready of 1 medium size onion chopped and Handfull of curry and coriander leaves chopped.You can also add green chilli.Instead of green chillies I added chilli powder.
5.Add this to the batter.Add 1/2-1 tsp of chilli powder,1 tsp cumin seeds.
6.If the batter is thick no need to add rice flour.If it is watery then add 1/4th cup (25 gms) of rice flour.
7.Mix altogether and form a batter.
8.Take a Kadai.Heat with enough oil for deep frying.Add the batter with hands or with spoon.
9.Flip to other side when the bottom part gets cooked.Fry till both the sides turns golden red colour or till the bubbles near punugulu stop bubbling.Drain punugulu over paper towels to remove the excess oil.
