Peanut Chutney

Peanut Chutney is the best combination for Punugulu,also an interesting side dish for any breakfast.Apart from its deliciousness it provides good health benefits.By consuming peanuts it can reduce inflammation, diabetes, cancer.Also a good source of minerals,vitamins and antioxidants.So we can consume daily in our diet.The recipe of peanut chutney as follows.


Preparation Time : 5 mins
Cook Time : 10 mins
Total Time : 15 mins

Ingredients : 
Peanuts-1/3 cup (30 gms)
Urad dal-1 table spoon
Onion-1 medium size or 3 small onion chopped
Red chillies -4
Tamarind- a small piece
Garlic-1 
Asafoetida-a pinch

For tempering-
Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Red chilli-1 broken

Instructions : 
1.Take a pan.Heat on medium flame.Add 1/3 cup of peanuts.Dry roast for 2 mins.
2.Once dry roasted transfer to plate.Remove the skin once it is cooled.The skin gives a bitter taste if it is present while grinding.

3.Take the pan.Heat with 2 tsp oil.Add 1 table spoon urad dal and saute for a minute.

4.Add 3 small onions or 1 medium size onion (chopped) and 4 red chillies.Saute onion till it becomes golden red colour.The onions should get cooked nicely.

5.Add a small tamarind piece and saute together.Switch off the flame and add 1 garlic.No need to roast garlic.The raw garlic gives a very good flavor to this chutney.

6.Add the ingredients to mixie jar and grind smooth.Add 1/2 -1 tsp salt required for this chutney and a pinch of asafoetida.

7.Once grinded temper it.For tempering take a pan,heat with 1 tsp oil.Add 1/2 tsp mustard seeds.Once it crackles add 1/2 tsp urad dal and 1 red chilli broken.Suate urad dal till it turns to golden red colour.Switch off the flame and give temper to chutney.Serve this chuney with hot IDli,Dosa or punugulu.
