Nawabi Paneer/White Gravy Paneer/Mughalai Nawabi Paneer

Nawabi Paneer is a Mughlai dish..Nawabi comes from the word Nawab,They were the rulers in several princely states under the Mughal empire in India.They were known to be expert judge in matter of taste.One such dish is Nawabi Paneer made with cottage cheese paneer cooked in creamy gravy with nuts and spices.The recipe as follows:-

Ingredients:
For Paste-
Onion-1 large size /2 medium size (chopped cube shaped)
Green Chillies- 4-5 nos
Ginger-2 inch
Garlic- 5-6 nos
Cashew Nut-12nos
Almond-6 nos (Blanched)

For gravy-
Paneer-1 cup (150 gms)
Bay leaf-1
Cloves-3
Cinnamon-2 inch
Cardamom-4 nos
Curd-1/2 cup
Milk-1 cup
Pepper powder-1 tsp
Sugar- 3-4 tsp
Cream-2 tsp

Instructions : 
1.Keep ready of chopped onions cut into cube aize(1 large size or 2 medium size),4-5 green chillies, chopped 2 inch ginger, chopped 5-6 nos of garlic.

2.Take a pan,Heat with 2 tsp of oil,Add chopped ginger and garlic.Saute it for a minute.

3.Add onions and green chillies and saute till the onion becomes translucent.Add required amount of salt to the pan.(I have added green chillies more as they arent spicy,but as per your spice level you can add 3-4 green chillies.)

4.Add 12-13 cashew nuts and 6-7 blanched almonds to blender.

5.Add saute onion,ginger garlic and chilli to blender and blend it.

6.Blend it to fine paste.

7.Take the same pan.Heat with 2 tsp of oil and 1 tsp of butter.Add 1 tsp of cumin seeds,1 Bay leaf,2-3 cloves and 4 cardamon pods.

8.Add paste to pan and cook in low flame till the raw smell goes away.It can be cooked by covering with lid for 5-7 mins.

9.Add 1/2 cup curd to pan.The curd should be whisked so it easily gets mixed with the paste without forming lumps.Cook for a minute.

10.Add 1 cup of milk and 2 tsp of cream and keep stirring till it gets mixed and let it cook for 5 minutes.The gravy would become thick and creamy texture.
Add 1 tsp of pepper powder and required amount of salt.Also add 3-4 tsp of sugar and cook for a minute.When the sugar melts and caramelizes it gives a nice flavour and glaze texture.

11.Add 1 cup of chopped paneer into cube pieces.Cover with lid and cook for 5 minutes.

12.Stir the gravy and switch off the flame.Serve with Roti and Naan
