Plum Cake is perfect for Christmas or the whole year.It is made from nuts,dry fruits which are soaked in alcohol but I have soaked in apple juice,caramelized sugar and the rest ingredients is like the normal cake.I had during my childhood days and this is the first time I tried this cake and came out very well.Here is the full recipe of plum cake.

Ingredients-
Eggs-4
Oil-1 cup
Sugar-1 cup (200 gms)
Maida-2 cup (400 gms)
Milk-1/2 cup
Baking powder-1 1/2 tsp
Baking soda-1/2 tsp
Apple juice/Grape juice/Orange juice-1 cup
Vanilla Essence-2 tsp
Cloves-2
Cinnamon-2
Mixed nuts- cashew,almond,walnut -1/2 cup (100 gms)
Dry Apricot-1/4th cup (50 gms)
Raisins-1/4th cup (50 gms)
Dates-1/2 cup (100 gms)
Tutti Fruitti-1/2 cup (100 gms)
For sugar syrup
Sugar-1/2 cup(100 gms)
Water-3 tsp

Instructions :
1.Take a bowl,add 1/2 cup of mixed nuts(Cashew nut,Almond and Walnut.)
2.Add 1/2 cup(100 gms) of seedless dates.
3.Add 1/2 cup (100 gms) of Tutti Fruiti.
4.Add 1/4th cup (50 gms) of raisins.
5.Add 1/4th cup (50 gms) of Apricots
6.Add 1 cup of Apple juice.Mix it.Close the lid and let it soak for 8 hrs or overnight.(This ingredients can be soaked in grape juice,orange juice or alcohol like Rum,Brandy.)
7.Take a tea pot or pan.Add 1/2 cup of sugar and 2-3 tsp of water.Turn the flame to low to melt and caramelize the sugar.Keep stirring.
9.Once it reaches this stage,add 1/2 cup of warm water.Switch off the flame.It will become crystal but after some time it will melt and form a syrup.
10.Take a bowl,Add 4 eggs.Beat the eggs with electric beater in low speed then gradually increase the speed to medium till it forms a froth.Also we can beat in mixie jar.
11.Add 1 cup of powdered sugar.Beat again till it is mixed properly.Then add 1 cup of oil into it or 1 cup of butter ( 112 gms).Blend it thoroughly.
12.Lets sieve the flour in the bowl.Add 2 cups of Maida,1 1/2 tsp of Baking powder and 1/2 tsp of Baking soda.Give a good mix and pour the mixed syrup of egg,sugar and oil.( Here for flour I have used a different bowl and for beating egg,sugar and oil I had used another one.)So mixing the wet ingredients with dry one.Add 1/2 cup of milk and 2 tsp of Vanilla essence.Mix it thoroughly.(Milk should be at room temperature.)
13.Add the soaked ingredient into it.Give a good mix.All the ingredients are added.The cake batter is ready.
14.Lets preheat the oven at 350 degree Fahrenheit and bake for 60-80 minutes.After 1 hour check the cake pan if it is ready or not.Check by inserting tooth pick if it comes out clean or not.Start preheating the oven.
15.Lets grease the cake pan with butter and pour the batter into to the pan.I have used two cake pan and filled with batter in each of them.
16.For me it took 1 hr and 15 mins to bake this cake.Allow the cake to cool..Once its cooled try to scrap from all the sides with knife and invert on a plate or wire rack it will come out nicely.
17.Serve and enjoy the cake!!
