Strawberry Phirni is a delighful rich dessert.Phirni is very popular in North India.It is made of milk,rice and sugar and garnished with nuts.Phirni is like paal payasam which is famous in south India.Only variation is the long grained rice also payasam is served hot while phirni is served cold.We can always make plain phirni but the tartness of strawberry is an excellent flavor paired with sweet phirni.Like strawberry phirni, we can make with different fruits and blend it with phirni.Here is the recipe of strawberry phirni.

Ingredients:
Milk-2 cups
Sugar-2 spoon-1/4th cup
Basmati rice-3 spoons (1/2 of 1/4th cup)
Strawberry puree-1 cup (10nos of strawberries)
Almonds-3 nos
Pista-3 nos
Procedure:
1.Take a bowl,add 3 spoons of rice and soak them in water for 20 minutes.
2.Take a pan or pot,heat with 2 cups of milk in medium-low flame.Keep stirring occasionally.Boil the milk till it reduces to 3/4th of its quantity.
3.Drain the water from soaked rice and make a paste of rice and milk.While grinding rice use 2 tsp of milk.
3.Once milk gets boiled add the ground rice and milk paste to this.After adding stir continously so no lumps are formed.
4.Once rice gets boiled, the milk gets thick and creamy.Add 2 spoons of sugar.(After adding 2 spoons of sugar add more if needed.)
5.Boil the milk till the sugar melts,keep stirring.Lastly add 1 tsp of cardamom powder and mix well.Switch off the flame and let it get cooled.
6.Lets make puree of 10-12 strawberries.Once the phirni has cooled down add 1 cup of strawberry puree.Mix well.Refrigerate for 2 hours.
7.Take the strawberry phirni,garnish with chopped almonds and pistachio.Serve it chilled!!!!
