Dabeli/Mumbai style Dabeli/Double roti

Dabeli is a roadside snack in Mumbai also known as "Double roti".Other than Vadapav and Pav Bhaji Dabeli is also famous in Mumbai.It is most popular in Gujarat originating in the Kutch region of Gujarat.It consists of dinner rolls with date-tamarind chutney,red chilli garlic chutney and a spicy yet sweet potato filling.It is a quick recipe if you have Dabeli masala powder and date-tamarind chutney at home or else it is a long process to make but worth trying this recipe.Here is the full recipe of Dabeli masala powder,date-tamarind chutney and Dabeli.

Ingredients :
Ladi Pav (Bun)-9
Boiled and Mashed Potatoes-1 cup
Coriander leaves-Handfull
Pomegranate-Handfull
Peanuts-Handfull
Chilli powder-1 tsp
Butter-2 spoons
chopped onions-1/4th cup
Sev(omapodi)-1/4th cup

For Dabeli masala
Corainder seeds-2 tsp
Cumin seeds(Jeera)-1 tsp
Pepper-1 tsp
Sesame seeds-1 tsp
Cloves-2
Cinnamon-1 inch
star anise-1
Red Chillies-4-5
Grated coconut/Dessicated Coconut-2 tsp
Sugar-2 tsp

For Sweet chutney
Tamarind-Lemon size
Dates-12-15Nos

For Garlic Chutney
Red Chillies-4-5Nos
Garlic pods-6-7Nos

Procedure:
For Dabeli masala-
1.Take a pan,heat it.Add 2 tsp of corainder seeds,1 tsp of cumin seeds (Jeera),1 tsp of pepper,1 tsp of sesame seeds,2 cloves,1 inch cinnamon,1 star anise,4-5 dry red chillies(chillies can be adjusted as per your spice level).Fry it in a low flame for 3-5 minutes till you get a nice aroma.
2.Add 2 tsp of grated coconut.Fry for 2-3 minutes till the moisture and stickiness goes away or you can use dessicated cococnut.
3.Once this mixture cools down add 2 tsp of sugar and grind them in a mixer.Grind to fine powder,Dabeli masala powder is ready.
4.For sweet chutney-
soak lemon size tamarind in 1 and half cup of water.Also soak 12-15 dates in warm water for 10 mins.
   
5.Extract the tamarind pulp by pressing the tamarind pieces and filter them using stainer so the shell of tamarind and seeds will strain away.
6.Take a pan heat it.Pour the extracted pulp and boil it for 7-10 mins.
           
7.Now lets make the puree of soaked dates.
and add the dates into it once it gets boiled.Give a good mix and boil it for 10-15 mins.
        
9.Once it becomes thick switch off the flame.When it cools down can be stored in air tight container.For Dabeli 2 spoons of sweet chutney is required.
             
10.Take a pan,heat it with 2 tsp of oil.Add hanfull of peanuts and fry for a minute.Add 1 tsp of Dabeli masala to it.Mix it thoroughly then add 1/2-1 tsp of red chilli powder.Give a good mix and keep ready for making Dabeli.
11.For Garlic chutney-
Take 6-7 garlic pods and 4-5 dry red chillies.Grind them in a mixer with little salt.After grinding add little water.This chutney should be little watery, it helps in applying chutney to the pav(Bun).(I had used 6 small red chillies but can be adjusted as per your spice level)
12.Once all chutney is done,lets prepare the potato mix for Dabeli.Take a pan,heat it with 2 tsp of oil.Add 1 spoon of Dabeli masala powder to it.Give a good mix without forming lumps.
                                        
13.Add 2 spoons of tamarind paste to it.Mix it thoroughly by adding little water to it.
14.Add 1 cup of mashed potatoes with 1 tsp of salt.Give a good mix.After mixing transfer it to a bowl or plate.
15.Once it is cool down add handfull of chopped corainder leaves and pomegranate.
16.Lets assemble the Dabeli pav.Take a Pav (bun).Cut it into L shape and make pocket of it.Apply garlic chutney on both the sides.
17.Apply sweet chutney on both the sides.
18.Add 1 spoon of potato mix to it.Then add chopped onions and fried peanuts to it.
19.Again stuff with 1 spoon of potato mix and gently press from sides with spoon.
20.Take a pan,Heat it with 2 spoons of butter.Place the prepared Dabeli and roast on both the sides.
21.Take a plate of sev (Omapodi).Dip the Dabeli in sev.Serve hot!!!
