American chop suey is a dish made from meat with thick tomato sauce.Usually in India it is made with vegetables which is popular among all the restaurants and street side stalls.This is the fusion of Chinese and American recipe made in India.Chop suey is made from thinly sliced vegetables with very light sauce bound in a starch thickened sauce.A deep fried crispy noodles is mixed with the sauce and eaten.It brings many nutrients and fewer calories.

Ingredients :
Hakka Noodles/Noodles-100 to 150gm
Ginger-2 inch thinly sliced
Garlic-3 nos chopped to small pieces
Carrot-1/4th cup thinly sliced
Onion or spring onion-1/4th cup thinly sliced
Red capsicum-1/4th cup thinly sliced.
Yellow capsicum-1/4th cup thinly sliced.
Green capsicum-1/4th cup thinly sliced.
Cabbage-1/4th cup chopped
Sugar- 1 spoon
Salt-1 tsp
Tomato Ketchup-1/4th cup
Chilli sauce -1/4th cup (If not chilli sauce then chilli powder+tomato ketchup-1tsp+1/4th cup)
Soya sauce-1 tsp
Corn flour-3 tsp
Corainder leaves stem /spring onions-1 tsp
Procedure:
1.Take a bowl or open pan.Add enough water to boil the noodles.I had small round shape noodles so I added 5.
2.Once boiled,it forms like this.Within 7-10 mins the noodles gets boiled.
3.Now strain the water from noodles and transfer it to a bowl.Keep it aside.Lets fry the noodles after making the chop suey gravy.
5.Now let's make chop suey gravy.
Take a pan.Heat it with 2 to 3 spoons of olive oil.Add chopped 1 inch ginger and 3 garlic pods.Saute it for a minute.Then add chopped onions.(Also spring onions can be used which enhances the taste.)keep stirring till it becomes translucent.After that add all the chopped veggies and 1 tsp salt and saute it on a high flame for 5 mins.The veggies will get cooked and it will be crunchy.
6.Add 1/4th cup of tomato ketchup and 1/4th cup of chilli sauce.If you don't have chilli sauce then add 1 tsp chilli powder +1/4th cup of tomato ketchup.Saute it till the raw smell goes away.
7.Add 1 tsp of soya sauce.Give a good mix.
8.Add 1 spoon sugar.
11.Within 5 minutes it will be ready.Now keep this aside.
12.Take a pan for deep frying of noodles.Heat enough oil.The oil should be very very hot.If the oil isn't hot then the noodles will absorb more oil or else u can keep extra hot oil in another pan and pour in this.
13.When the oil is hot add Noodles and fry.When one of the sides starts turning to light red flip it to other side.Fry it till it becomes crisp.
