Mango Sheera/Mango Kesari/Mango Halwa

Kesari is a sweet made with rava,water and sugar.It is a quick recipe to make,whenever we feel like eating any sweet this dish can be easily made.Here is a fusion of Mango pulp to this Kesari, the Mango Kesari.You will love the flavour of mango,ghee,cooked rava and sugar.Its awesome while tasting it and it has very good aroma.Once during potluck one of my friend made this.This dish was hit on that day,from Kids to Adults  all loved this.So I wanted to give a try to this recipe and it came out very well.Here is the recipe of Mango Kesari/Mango Halwa/Mango Sheera.

Ingredients : 
Rava/Semolina/Sooji-1 cup (200gms)
Mango pulp-1 cup+ 2 spoons
Sugar-1 1/2 cup
Water-2 cups
Cashewnut- 6-7 chopped
Raisins- 6-7
Ghee-3 tsp

Procedure :
1.Take a ripened mango,cut into chunks and make puree of it.Also you can use store bought mango pulp.Keep it aside.
2.Now take a pan,add 1 cup rava and roast the rava in a very low flame until it changes its colour to light red.Keep stirring else the rava will get burnt.Also u can add 1-2tsp ghee and roast the rava.I roasted rava without ghee.
3.Now transfer the rava to a plate and let it get cooled.Now take a pan and add 2 cups of water for 1 cup of rava,Boil it.Once boiled turn the flame to low and slowly add rava and keep stirring.Break all the lumps if formed.
4.Now add the mango pulp to the boiled rava and stir for a minute.(I measured the mango pulp,it was 1 cup + 2 spoons of mango pulp.You can add more if you want.)
5.Lets add 1 1/2 cup sugar.It can be adjusted as per the requirement.(1 1/4th cup to 1 1/2 cup).Stir it nicely.As soon as you add sugar it will start melting and the consistency will be like this.
6.In between add 2 tsp ghee so the Kesari won't dry off.Keep stirring for 7-8 mins and then switch off the flame.Let the Kesari be in the pan for 5 mins closed with the lid.While serving after 5 mins will give you a very good aroma.

7.Garnish with chopped cashew nuts and raisins fried in ghee.You can also add almonds.For garnishing,take a small pan,heat it with 1 tsp of ghee,add raisins the raisins will become large and u can pour in the mango kesari.Again add 1 tsp ghee fry the cashew nuts in a medium flame till it becomes light red.Pour this to the Mango Kesari.Give a good mix Mango Kesari is ready.Serve hot in a tasting bowl!!
