Karuppati Appam is a Maduari special Appam made with Karuppati (palm jaggery),rice and urad dal flour avaible in Madurai local streets.If you go to buy milk at morning then you can see people selling appams.At roadside just for an hour they will be selling appams, if you go late then you will miss buying this.Karuppati is high in Vitamin B,iron and strengthens the bone.It is a great source of energy, and presence of iron makes it a great antitode for anemia.Usually it is given to Pregnanat Ladies from 7th month to ease the labour.Also given after delivery,which purifies the blood and strengthens the body.

Fermentation Time : 8 hrs
Total Time : 12 hrs 15 mins
Ingredients :
Karuppati-1 cup(200 gms)
Idli flour-2 cups
Water-1/2 glass
For Idli Flour-
Idli rice-1 cup
Urad dal-1/4th cup
Ponni raw rice-2 spoons( for crispiness)
Fenugreek seeds powder(Vendeyam)-2 pinch
Procedure :
1.Soak 1 cup Idli rice and 2 spoons raw rice in water for 4 hrs.
2.Soak urad dal in water for 2 hours.After 2 hrs grind the urad dal in grinder by adding minimal water and after 4 hrs grind the Idli rice by using very little water.Mix the rice flour and urad dal flour for 4-5 minutes.Add 2 pinch of fenugreek seeds powder.It gives nice aroma.Dont add salt.This flour consistency should be more thick.er than Idli flour.
3.Take 2 cups of flour in a bowl and the rest can be used for making Idli and Dosa by adding required amount of salt.Lets keep both the bowl for fermentation for 7-8 hrs or overnight.
4.After fermentation take the bowl and keep it aside.
6.If u have a whole Karuppati then break into pieces and boil in 1/2 cup water.
8.Once boiled let it get cooled fully.If we pour hot Karuppati syrup in flour the flour will get spoilt.Lets strain the impurities from the syrup and add to the flour.The flour consistency should be of dosa consictency.
10.Now give a good mix to the flour.Lets heat the Dosa tawa on low flame and pour the batter on tawa once it is hot.
12.Within a minute the appam will be ready.No need to flip to other side.Just apply salted butter or ghee to the sides of the Appam.Try to remove from all the sides and then serve hot.

Delete@Arul --Usually, hand-made butter will be added on top of this to enhance the taste and richness ... You could try with shredded coconut and cardamon powder and we could give a new name for that and get the patent right :-)
