Chicken Briyani Traditional style is a easy one pot recipe.I made using normal onions but small onions gives a very good taste.The main ingredient is the rice the seeraga samba rice which has a distinct taste and a good flavour.So here is the recipe for Chicken Briyani.

Ingredients :
Chicken- 1 lb/ 1/2 kg
Seeraga Samba rice/Basmati rice-2 cups
Pudina-Handfull of leaves
Corainder leaves-Handfull of leaves
Green chillies-8-10 nos(you can use less as per your spice level)
Ginger-2 inch
Garlic pods-5 nos
Thin sliced Onion/small onion-1 medium size/10 nos
Chopped Tomato-1 small size
Turmeric powder-1/2 tsp
Garam masala-1 tsp
Briyani masala-1 tsp
Bay Leaf-2
Cloves-3 nos
Cinnamon sticks-2 inch
Cardamom-3 nos
Shahi jeera-1/2 tsp
Cooking oil-3 spoons
Salt- to taste
Ghee-2 tsp
Procedure:
1.Soak Seeraga Samba rice/Basmati rice in water for 20-30 mins.
Make a paste of handfull leaves of pudina,handfull leaves of corainder leaves,8-10 green chillies,2 inch ginger,5 garlic pods.Use minimal water while grinding.
2.Take a cooker.Heat it with 3 spoons of oil,add 1/2 tsp shahi jeera,2 Bay leaf,3 cloves,2 inch cinnamon sticks,3 cardamom.Fry for a minute.
3.Add 1 medium thinly sliced onions/ 10 nos of small onions.Fry it till it becomes transparent or changes to light red.
6.Once it changes its colour and starts oozing out oil add 1/2 tsp turmeric powder, 1 tsp garam masala, 1 tsp Briyani masala.Cook it till the raw smell goes away.
7.Add chicken pieces and Stir it in a high flame for 5 minutes and then close it with a lid and cook for 10 minutes in a low flame.After 10 minutes once the chicken is cooked and starts oozing out oil add 2 cups of water for 1 cup rice. Boil the water in the cooker. (Here for 2 cups add 4 cups of water)
8.Once water is boiled add rice in the cooker.when everything starts boiling close the lid and turn the flame to low for 10 mins.After 10 mins switch off the flame and wait till the pressure goes down.
9.After releasing the pressure,add 2 tsp of ghee and mix it very carefully without breaking the rice.Serve hot with onion raita or chicken gravy.
