Puri is a type of snack,consists of round or ball shaped,hollow puri.It is deep fried crisp crepe.
This puri becomes the base of Pani Puri.It is filled with flavoured water that is mint-corainder-chilli- spice water and another paste is tamarid-dates-jaggery paste and potato-onion stuffing.You get all the flavours sweet,sour n spice.Here is the recipe of making puffed and crisp puri.Here is the full recipe of Pani Puri

Ingredients:
Rava/Semolina/Suji-1 cup
Whole wheat flour-2 tsp
Rice flour-2 tsp
Oil to knead-3tsp
Salt- to taste
Cooking oil-deep frying
Hot water-1/4th cup
Procedure:
1.Take a bowl,add 1 cup of rava,2 tsp of whole wheat flour,2 tsp of rice flour and required amount of salt to it.
2.Add 3 tsp of oil and mix it thoroughly till no lumps are formed.Now add 1/4th cup of hot water to it and make a dough like a chapathi dough.The dough should be smooth and soft.Knead the dough for 5 minutes.If required you can just sprinkle some water to the dough.Cover it with paper towel or cloth.If you forgot to cover,the dough may become hard.
Let it rest for half an hour.
3.After half an hour knead it again for a minute and then divide it into three balls.Take one ball and roll it like a chapathi by applying oil to it.This should be very thin.
4.Now take a cookie cutter of round shape and cut it into 5 to 6 pieces.If u dont have cookie cutter you can take any vessel of round shape and can take that shape and cut it into pieces.
5.Take a Kadai for deep frying of puris.Drop the puris in the Kadai only when the oil is very very hot.
6.Now drain the excess oil from the puri by placing them over a paper towel.Once they get back to room temperature,can store it in a air tight container boxes for the same crispiness.
