Pizza Kachori/Mcpuff recipe

Kachori is a very popular snack in North India.It's a deep fried pastry filled with savory stuffing.It can be filled with any veggies,onion,potatoes,lentils,chicken,mutton.The same way in Mc Donalds,we get mc puff.The outer cover is made up of maida and inside it will be stuffed with veggies mixed with cheese and shape will be rectangular.I have used whole wheat flour here.You can make any shape u want.Here goes the recipe.

Ingredients :
Whole wheat flour-1 cup
Rice flour-1/4th cup
Chilli flakes-2 tsp
Finely chopped Onion-1/4th cup
Chopped Green capsicum-1/4th cup
Chopped Red capsicum- A small portion
Chopped Yellow capsicum-A small portion
Boiled sweet corn-1/4th cup
Maida-2 tsp
Milk-1/4th cup
Mozzarella shredded cheese-2 to 3 spoons
Salt-to taste
Cooking oil
Warm water-1/4th cup

Procedure:
1.Take a bowl,Add 1 cup whole wheat flour,1/4th cup rice flour and little lesser than 1 tsp of salt.Rice flour is for the crispiness.
2.Add 1 tsp of chilli flakes,If u have mixed herbs u can add 1/2 tsp of mixed herbs.Drop 4 tsp of oil to it.Mix it thoroughly so that no lumps are formed
3.Add warm water to the flour,mix it thoroughly and prepare a dough.Knead it for 5 minutes.Then cover it with paper towel or cloth.Let the dough rest for 20 mins.By the time we can start preparing for the veggies to be stuffed inside.
4.Take a pan,Heat it with 2 spoons of cooking oil(olive oil can be used),Add 1/4th cup of chopped onions.Lightly toss it,no need to fry until it turns reddish in colour.Cook it in medium flame.
5.Now add all the veggies,1/4th cup chopped green capsicum,chopped red and yellow capsicum,1/4th cup boiled corn, required amount of salt and 1 tsp of chilli flakes to it.Lightly Toss it.You can add any veggies you want.You can also add 1/2 tsp of mixed herbs if u have.
6.By adding 2 tsp of maida and 1/4th cup of milk it will bind the veggies.Hence add 2 tsp of maida and slightly roast it till it changes it colour.
7.Then add 1/4th cup of milk and let it get cooked with the veggies for a minute.Keep on stirring after adding milk.
8.Once done then transfer it to bowl and then add 2 or 3 spoons of mozzarella cheese and mix it thoroughly.Let the veggies get cooled.
9.Now take the dough and knead it again.Divide it into 4 to 5 balls.Take the rolling board and start rolling like chapathi.It should not be thick and thin,should be of medium size.Take round shape of cookie cutter or any round shape of vessel u have in the kitchen and cut it round shape as much as possible.
10.Take that round dough and stuff it with the veggies at centre.The inside stuffing should not be hot.It should be cooled enough.
11.Now apply water on the edges and cover it with another round dough.By doing this the stuff won't come out while frying of this.With the help of fork,put the impression of fork in the edges and on both the sides of Kachori.It will give a good design and stuffing will be in the centre.
12.Take a pan and heat it with oil for frying.Cook it in a medium flame.Once the bottom part starts turning to light reddish in colour flip it to other side.
13.Drain the excess oil of Kachoris in a paper towel.Serve hot with tomato ketchup.I could make 10 nos of Kachoris of this 1 flour cup.
