Mushroom Briyani/Kaalan Briyani

Mushroom Briyani is a delicious healthy Briyani made with rice, mushrooms, spices and herbs. Mushroom boosts immune system, they help in lowering cholesterol, high in vitamin D which are beneficial for bones and has many nutritions.


Here is the recipe of Mushroom briyani.

Ingredients :
Mushroom-100 gms
Seeraga Samba rice/Basmati rice-1 1/2 cup
Pudina-1/2 bunch
Corainder Leaves-1/2 bunch
Green chilli-6 
Ginger-1 inch
Garlic pods-4 nos
Thin sliced Onion-1 medium size
Chopped Tomato-1 small size
Turmeric powder-1/2 tsp
Garam masala-1 tsp
Briyani masala-1 tsp
Bay Leaf-2
Cloves-3 nos
Cinnamon sticks-2 inch
Cardamom-3 nos
Shahi jeera-1/2 tsp
Cooking oil-3 spoons
Salt- to taste

Procedure:
1.Soak Seeraga Samba rice/Basmati rice in water for 20-30 mins.
Make a paste of 1/2 bunch pudina,1/2 bunch corainder leaves,6 green chillies,1 inch ginger,4 garlic pods.Use minimal water while grinding.


2.Take a pan or cooker.Heat it with 3 spoons of oil,add 1/2 tsp shahi jeera,2 Bay leaf,3 cloves,2 inch cinnamon sticks,3 cardamom.Fry it for a minute.Keep ready of thin sliced onions.


3.Add 1 medium thin sliced onions.Fry it till it becomes transparent or changes to light red.


4.Once onion gets fried add 1 chopped tomato.Cook it till it becomes soft.


5.Now add the paste and cook it till it changes its colour to brown.


6.Once it changes its colour and starts oozing out oil add 1/2 tsp turmeric powder, 1 tsp garam masala, 1 tsp Briyani masala.Cook it till the raw smell goes away.


7.Add chopped mushrooms and fry it for a minute.Now take a cooker and add 2 cups of water for 1 cup rice. Boil the water in the cooker. Once it is boiled add the prepared masala in this and add required salt.


8.Let the prepared masala gets boiled for a minute and add rice in the cooker.Close the lid when everything starts boiling and turn the flame to low for 10 mins.After 10 mins switch off the flame and wait till the pressure goes down.Serve hot with onion raita or carrot raita.

9.For carrot raita-Grate 2 carrots in a bowl and add  required amount of salt, 3-4 spoons of curd and little water.Mix it well.Carrot raita is ready!!
