Egg fried rice is easy to make with eggs and rice.Veggies can be added like carrots and capsicum but I haven't added any veggies to this recipe.Eggs which are excellent source of protein,raises the good cholesterol and always filling.It is good to make as lunch.Kids will love the rice.Here is an healthy,tasty recipe of egg fried rice.

Ingredients:
Basmati rice-1 cup
Chopped garlic cloves-3 Nos
Chopped Onions-1/2 cup
Pepper powder-1 tsp
Eggs-3
Chilli sauce-2 tsp
Soya sauce-1 tsp
Vinegar-1 tsp
Chopped Spring onion-1 spoon
Cooking oil-4 spoons
Procedure:
1.Soak 1 cup Basmati rice in water for 20-30 mins.Take a pot,heat it with sufficient water to cook the rice and add required amount of salt .Add 2 spoons of oil in it,by adding oil the rice won't get mushy while draining the water.Once the water gets boiled add the rice.Within 7-10 minutes the rice will get cooked,strain the rice and pour it in a big pan or plate.Let the steam go off.
If you are cooking in pressure cooker,for one cup of rice add 2 cups of water and salt accordingly.once the water gets boiled add the rice.After adding rice once it starts boiling,close the lid and reduce the flame to low,and keep it for 10 mins.After 10 mins switch off the flame.Remove the lid and pour rice in a big vessel or plate to let go off steam.
2.Take a pan heat it with 4 spoons of cooking oil,add chopped garlic and fry it.Then add 1/2 cup chopped onion.Saute it till it changes to light reddish colour.(Can be used the onion part of spring onions which gives a good taste.)
3.Break the 3 eggs and pour the white and yellow yolks.Keep on stirring once you add the egg till it becomes soft.Then add required amount of salt and 1 tsp of pepper powder into it.Give a good mix.Already for rice we have added salt so as accordingly add little salt required for the egg.
4.Add 2 tsp of chilli sauce and saute it till the raw smell goes away.
5.Then add 1 tsp of soya sauce,1 tsp of vinegar and mix it well.
6.Lastly add the rice,give a stir in a high flame for 2 minutes and then switch off the flame.Let the rice be in the tawa for few minutes.
7.Garnish with chopped spring onions and serve hot.
