Poondu Kulambu/Losan Kolkar

Poondu Kulambu is a South Indian gravy made of garlic,specific powder and tamarind juice.This specific powder is made at home for this gravy.Usually garlic boosts immunity.After delivery of baby we consume this gravy frequently to strengthen the body.Here are the instructions for making Poondu Kulambu

Ingredients : 
Garlic-15nos
Tamarind-Small Lemon size
Coriander seeds-3 table spoon
Black urad dal-1 table spoon
Idli rice-1/4 table spoon 
Fenugreek seeds-1/8 table spoon 
Red Chillies-6 nos
Turmeric powder-1/2 tsp
Salt-1/2-1 tsp

Instructions :

1.Take a pan.Heat in low flame.Add 3 tbsp (table spoon) coriander seeds.Fry them for continous 5-7 minutes.Once it is roasted "tup tup" sound will come then transfer to plate.


2.Add 1 tbsp black urad dal,1/4 tbsp idli rice,1/8 tbsp fenugreek seeds.Fry till the rice becomes red on low flame.Once rice becomes red transfer to plate.Another check is break urad dal into 2 parts,if it red then all these ingredients are roasted.


3.Add 5-6 red chillies to pan.Fry for a minute on low flame then transfer to plate.


4.Grind these ingredients to very fine powder.


5.Sieve if any big solid particles are there.This powder should be very fine.Usually in my hometown this powder is made in large quantity and given outside to big machine to powder these ingredients.When comes to small quanitity it is hard to make it fine, so sieving is important to remove the bigger solid particles.

6.Soak small lemon size tamarind in a luke warm water in bowl for 10 mins.


7.Now take that powder in a bowl.Add 1/2 tsp turmeric powder and 1/2 tsp salt.


8.Take the soaked tamarind bowl.Extract the juice from it.Filter it and add to this bowl.


9.Add 3/4th glass of water to this.Give a good mix.


10.Now Heat this gravy so the raw smell goes away.Once boiled switch off the flame.


11.Take 12-15 garlic.Peel the skin.Take a pan.Heat with 4 tbsp sesame oil.Once oil is hot add garlic and fry till it becomes red.


13.Add boiled gravy to this and cook till the garlic becomes soft and gravy becomes thick.


14.Once oil oozes out from this gravy,it is ready.Switch off the flame and serve with hot rice.
