Lemon Rice

Lemon which is a rich source of Vitamin C promotes hydration,aids digestion and many more health benefits.If you visit South Indian Goddess temple you will get lemon as prasadam.We don't realize the importance of lemon this many days.As a whole lemon boosts immunity.One of the recipe of lemon is lemon rice. I prefer cooking rice in a open vessel so that all the starch can be poured out.The starch in the rice leads to increase in sugar level and gain weight.

Ingredients :
Lemon-3
Ponni Raw Rice-2 cups
Mustard seeds-1 Tea spoon
Urad dal-1 Tea spoon
Chana dal-1 Tea spoon
Red Chillies-4
Curry leaves-10 Nos
Asofoetida-1 pinch
Turmeric powder-1 Tea spoon

Step by Step Procedure :
1.For 1 cup of rice take 2 cups of water.Before cooking soak the rice in a bowl for 20 mins.IF the rice is soaked the rice gets soft once it is done.Take the cooker pour water in it.Heat it.once the water gets boiled then add the rice and pressure cook it for 3 whistles.Once it is done pour the rice in a plate.Let the steam go off.
If you are cooking in a open vessel,Fill it with water to half of that vessel..Let the water gets boiled.Take quantity of rice u want.
I measure in this glass which I have shown in the picture.This glass measures 100gms of rice which is sufficient for 1 person.I took 2 cups of rice.


2.Soak this rice in water till the water in the vessel gets boiled.Once the water gets boiled add it to the vessel.


3.Switch off the flame when the rice gets boiled.Cover it with a lid.Clip it from half of the sides to extract the water from it.Now keep this vessel near the sides of the sink.Bend the vessel very carefully and keep it for 10 mins.The water from it will get extracted.


4.After 10 mins you can pour out the rice in a plate.Let the steam go off.

                                                  

8.Take a pan.Heat it.Add 3 spoons of oil.Add mustard seeds,urad dal,chana dal and red chillies.Fry it till it gets light brown in colour.

                                                      



9.Add turmeric powder,Asofoetida and curry leaves.After adding this,it gives a very nice aroma.Switch off the flame.Add lemon juice to it.

                                                       


10.Now pour this to the rice and mix it throughly sometimes lumps are formed in the rice when we pour this mix to this rice.So you have to break all the lumps and mix it properly.

                                                        

11.Lemon rice is ready.You can serve with potato fry or sambhar.
